      <content:encoded><![CDATA[I am just curious to see what kind of dishes everyone on the forum makes for meatless Fridays. That we could post some recipes and maybe get a few ideas too. It can be hard to cook when there are fussy eaters in the house.<br />

Tonight I made meatless avocado egg boats and it was fantastic. Very simple, take a ripe avocado and cut it in half. Scoop a bit of the meat out and save it for later. Add a 1/2 tsp of butter to each side, add an egg, add shredded cheese then bake for 15-20 min at 240F....<br />
